This course is designed to introduce students to the basic principles of nutrition science and to the biology of food. The course covers the biological basis of food and the relationship between  nutrition and health. It also explores the role of nutrition in health and disease. Students learn about the chemistry of nutrients, including the macronutrients, and the structure and function of biological molecules, including proteins, carbohydrates, fats, and vitamins. This course also covers dietary supplements, the relationship between food and disease, and food allergies. The course is designed to give students a firm foundation for a career in food science, nutrition, or dietetics.
